Cullen Skink with Seaweed

Cullen Skink is a traditional Scottish soup, usually made with smoked haddock, onions, and potatoes. These vegetables are glutamate-rich, and the Inosinate-rich haddock creates a strong Umami synergy.⠀
We’ve made our version with local seaweed to add even more complex flavour to this heart-warming, milky soup. Serve with lots of crusty bread and seaweed butter.⠀
Ingredients: Serves 4⠀

500g smoked haddock⠀
350g potatoes⠀
2 medium onions⠀
25g fresh seaweed such as spiral wrack or sea sprigs, or 5g any dried seaweed, re-hydrated⠀
1 bay leaf⠀
300ml water⠀
400ml milk⠀
1TB butter⠀
salt and pepper⠀

5g dried ground dulse⠀
1tsp yeast extract⠀
