For the Iberico Pork Ragout⠀

7oz. (200g) Iberico pork loin⠀
Salt and pepper⠀
Unsalted butter⠀
1 clove garlic, minced⠀
4tsp. pork jus

For the Arugula Cheese Mixture⠀

1 1/3oz. (40g) faisselle fresh cheese⠀
1 2/3oz. (50g) arugula, minced⠀
1 Tbsp. olive oil⠀
2 slices Jamon Iberico⠀
Aged goat cheese, minced Italian parsley, and pepper for garnish⠀
