Chicken marinated in kefir with Umami seasonings. Sounds strange? Try it yourself!⠀
Kefir marination makes meat amazingly tender. A dash of fish sauce is the secret Umami ingredient here alongside soy sauce and ketchup. This is a perfect recipe for a barbecue.⠀
Ingredients Serves 2⠀

• 6 chicken drumsticks⠀
• 60ml Kefir made from cow's or plant-based milk⠀
• 1 clove garlic, minced⠀
• 1 thumb-sized piece of ginger, grated⠀
• 2tbsp soy sauce⠀
• 2tbsp olive oil⠀
• 2tbsp ketchup⠀
• 1tbsp fish sauce⠀
• 1tbsp Sriracha sauce⠀
• 1tbsp maple syrup⠀
• 1tbsp roasted white sesame seeds
Method⠀

• Mix all the sauces, maple syrup, garlic and ginger. Leave out the sesame seeds.⠀
⠀
• Marinate the chicken in the mixture for 2 hours or overnight.⠀
⠀
• Wipe the marinade mix off the chicken before cooking. Keep the marinade.⠀
⠀
• Heat 1 tbsp oil in a frying pan and cook the chicken over a high heat to brown it all over. Then turn the heat down and cook for a further 10 minutes, or until the meat is cooked through and the juice runs clear.⠀

• Or, roast the chicken in an oven for 30-40 minutes at 200ºC until the meat is cooked through and the juice runs clear.⠀

• Put the marinade into a sauce pan and heat until it has thickened. Pour this over the chicken.⠀
⠀
• Sprinkle on some sesame seeds. Garnish with pickled radish and coriander leaves.⠀
