Za’atar Yoghurt Roasted Chicken

This flavourful recipe features Za'atar, an ancient Middle-Eastern herb and spice mixture, and is perfectly accompanied by couscous, rice, or flat breads.
Ingredients (for 4 persons)⠀

1 kg chicken drumsticks and/or thighs, bone-in and skin-on⠀
2 tbsp Za’atar⠀
¼ tsp salt; adjust to taste⠀
2 tbsp Greek yoghurt⠀
2 cloves garlic, grated⠀
Chilli flakes to taste⠀
1 tbsp vegetable oil⠀
1-2 tsp lemon juice
Method:⠀

- Whisk all of the ingredients except the chicken in a bowl until well combined.⠀
- Taste and adjust seasoning.⠀
- Pour the marinade over the chicken, and mix well until all of the pieces are well coated.⠀
- Place in a non-reactive bowl, cover well with cling-film, and refrigerate overnight or for at least an hour.⠀
- When ready to cook, remove the chicken from the refrigerator, allow it to warm to room temperature, and preheat the oven to 200ºC.⠀
- Cover a baking tray with a piece of baking sheet, and place the pieces of chicken on it without crowding them.⠀
- Roast for 40-45 minutes until the meat is cooked through and the skin is crispy.⠀
- Serve with lots of fresh salad, creamy dips, couscous, rice and or flat breads, and enjoy.
